  • 2 cups cooked chicken (diced)
  • 8 oz cream cheese (room temperature)
  • ½ tsp dried oregano
  • 8 oz shredded cheddar cheese
  • 1 ½ lbs tomatillos (cleaned)
  • 1 jalapeno (seeds removed)
  • 6 tortillas
  • 1 avocado
  • 1 shallot

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Blend tomatillos, jalapeno, garlic, kosher salt, lime juice, and cilantro until smooth.
  3. Mix cooked chicken, cream cheese, oregano, cheddar cheese, and salt until well combined.
  4. Fill each tortilla with about ¼ cup of the chicken mixture, roll tightly, and place seam-side down in a baking dish.
  5. Pour the tomatillo sauce evenly over the rolled enchiladas.
  6. Cover with foil and bake for 20 minutes; then remove foil and bake an additional 5 minutes until bubbly.
  7. Let cool slightly before serving; garnish with sliced avocado and shallots if desired.
