Ingredients
- 1 lb lean ground beef
- 10 oz uncooked elbow macaroni
- 1 cup chopped onion
- 1 cup sliced mushrooms
- 2 stalks celery, diced
- 1 green bell pepper, seeded and diced
- (14.5 oz) can stewed tomatoes, undrained
- 8 oz tomato paste
- 1 cup vegetable stock
- 1 1/2 cups shredded sharp cheddar cheese
Instructions
- Preheat your oven to 350°F.
- Cook the elbow macaroni according to package directions. Drain and set aside.
- In a large skillet over medium heat, brown the ground beef with onion, mushrooms, celery, and bell pepper for about 10 minutes. Season with salt and pepper.
- In a blender or food processor, combine sugar, Italian seasoning, garlic powder, stewed tomatoes with juice, tomato paste, vegetable stock, salt, and pepper; blend until smooth.
- Stir in 1/2 cup of shredded cheddar cheese into the sauce.
- In a baking dish, mix the beef mixture with the cooked macaroni; pour sauce over it and stir well to combine.
- Top with remaining cheddar cheese and bake for about 30 minutes until golden brown.
