  • 4 fish fillets (such as tilapia, cod, or sole)
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme or fresh thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Fish

Pat the fish fillets dry with paper towels to remove any excess moisture. Season both sides with salt and pepper.

Step 2: Make the Lemon Butter Sauce

In a small bowl, combine the lemon juice, lemon zest, minced garlic, dried thyme, and a pinch of salt and pepper. Stir well and set aside.

Step 3: Cook the Fish

In a large skillet, heat the olive oil over medium-high heat. Add the fish fillets to the pan and cook for 3-4 minutes per side, or until golden brown and cooked through. The fish should flake easily with a fork and reach an internal temperature of 145°F (63°C).

Step 4: Add the Lemon Butter Sauce

Once the fish fillets are cooked, reduce the heat to low. Add the butter to the skillet and let it melt. Pour the lemon juice and zest mixture over the fish fillets, swirling the pan to coat the fillets in the buttery sauce. Let the sauce simmer for 1-2 minutes to meld the flavors.

Step 5: Serve and Enjoy

Transfer the fish fillets to serving plates, spooning the lemon butter sauce over the top. Garnish with freshly chopped parsley for a burst of color and flavor.

Notes

  • Choose Fresh Fish: Fresh fish fillets will provide the best flavor and texture. If using frozen, be sure to thaw them properly before cooking.
