Ingredients

For the Zucchini Bread:
1½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
2 large eggs
½ cup vegetable oil
½ cup granulated sugar
¼ cup brown sugar, packed
1½ cups grated zucchini (about 1 medium zucchini)
1 tsp vanilla extract

For the Orange Cream Cheese Glaze:
4 oz cream cheese, softened
½ cup powdered sugar
1–2 tbsp orange juice (freshly squeezed)
1 tsp orange zest


Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Set aside.

Step 3: Mix Wet Ingredients
In a large bowl, whisk the eggs, vegetable oil, granulated sugar, and brown sugar until smooth.
Stir in the grated zucchini and vanilla extract.

Step 4: Combine Wet and Dry
Gradually add the dry ingredients into the wet mixture, stirring until just combined.
Be careful not to overmix.

Step 5: Bake
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 6: Make the Orange Cream Cheese Glaze
In a medium bowl, beat the softened cream cheese until smooth.
Add the powdered sugar, 1 tablespoon of orange juice, and orange zest.
Mix until creamy and spreadable. Add more orange juice if needed to reach your desired consistency.

Step 7: Glaze and Serve
Once the bread is completely cooled, drizzle or spread the orange cream cheese glaze over the top.
Slice and enjoy!

Notes

Squeeze Out Extra Water – Lightly press the grated zucchini to remove excess moisture.
Don’t Overmix – Stir just until combined for a tender loaf.
Cool Before Glazing – If the bread is too warm, the glaze will melt and run off.
