Ingredients
For the Blackberry Filling:
-
4 cups fresh or frozen blackberries (if frozen, do not thaw)
-
½ cup granulated sugar
-
1 tbsp lemon juice
-
1 tbsp cornstarch (for thickening)
For the Cobbler Topping:
-
1 cup all-purpose flour
-
1 cup granulated sugar
-
1 tsp baking powder
-
½ tsp salt
-
1 cup milk
-
½ cup unsalted butter, melted
-
1 tsp vanilla extract
Optional for Serving:
-
Vanilla ice cream
-
Whipped cream
-
Extra blackberries or mint sprigs for garnish
Instructions
Step 1: Preheat and Prep the Pan
-
Preheat your oven to 350°F (175°C).
-
Grease or butter an 8×8 or 9×9-inch baking dish.
Step 2: Make the Blackberry Filling
-
In a mixing bowl, combine blackberries, sugar, lemon juice, and cornstarch.
-
Stir gently to coat the berries evenly.
-
Pour the blackberry mixture into the prepared baking dish.
Step 3: Mix the Cobbler Batter
-
In another bowl, whisk together flour, sugar, baking powder, and salt.
-
Add milk, melted butter, and vanilla extract. Stir until smooth and just combined—do not overmix.
Step 4: Assemble the Cobbler
-
Pour the batter evenly over the blackberry mixture.
-
Do not stir—let the batter sit on top to bake into a golden crust.
-
Optional: Sprinkle a bit of sugar on top for a crunchy finish.
Step 5: Bake the Cobbler
-
Bake for 45–50 minutes, or until the top is golden brown and a toothpick inserted in the topping comes out clean.
-
The blackberries should be bubbling around the edges.
Step 6: Cool and Serve
-
Let the cobbler cool for at least 10–15 minutes before serving to allow the juices to set.
-
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
Don’t Stir the Layers – Batter bakes into the perfect crust on its own.
Use Fresh or Frozen Berries – Both work great, just adjust baking time slightly if frozen.
Add a Citrus Kick – A little lemon zest brightens the flavor.
Sweeten to Taste – Adjust sugar based on how tart your berries are.
Let It Rest – It thickens up more as it cools, so give it a few minutes before serving.
