Ingredients
- 4 small russet baked potatoes
- 3 tbsp olive oil
- 3 cup small broccoli florets
- 1/2 cup sweet yellow onion (finely diced)
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup sour cream
- 2 cup cheddar cheese (shredded)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Scrub the potatoes and pierce each with a fork. Microwave on high for about 15 minutes until soft.
- In a skillet over medium-high heat, sauté onions in 2 1/2 tbsp olive oil for about 5 minutes. Add broccoli and cook for an additional minute; remove from heat.
- Allow potatoes to cool slightly, then slice in half lengthwise and scoop out most of the pulp.
- Brush the insides of the potato skins with remaining olive oil and bake for 15 minutes until golden brown.
- Combine sautéed veggies with sour cream and one cup of cheddar cheese in a bowl.
- Fill each potato skin with the mixture, top with remaining cheese, then bake for another five minutes until melted.
- Serve topped with additional sour cream and sliced green onions.
