Ingredients

For the Eggs:
6 large eggs
¼ cup mayonnaise
1 tsp Dijon mustard
1 tsp lemon juice
½ tsp Cajun seasoning (plus more for garnish)
Salt and pepper, to taste

For the Shrimp:
6 medium shrimp, peeled and deveined
1 tsp olive oil
½ tsp Cajun seasoning
Pinch of garlic powder
Squeeze of lemon juice

For Garnish:
Fresh chives or parsley, finely chopped
Extra Cajun seasoning or smoked paprika
Optional: thin slices of jalapeño or pickled onions


Instructions

Step 1: Boil the Eggs
Place eggs in a saucepan and cover with cold water.
Bring to a boil over medium-high heat. Once boiling, cover, remove from heat, and let sit for 10–12 minutes.
Drain and transfer eggs to an ice bath for easy peeling.

Step 2: Peel and Slice
Peel the eggs and cut each in half lengthwise.
Carefully remove yolks and place in a bowl. Arrange egg whites on a serving tray.

Step 3: Cook the Shrimp
Pat shrimp dry with paper towels.
Heat olive oil in a skillet over medium heat.
Toss shrimp with Cajun seasoning, garlic powder, and a squeeze of lemon.
Cook for 1–2 minutes per side, until pink and cooked through. Set aside to cool.

Step 4: Make the Filling
Mash the egg yolks with a fork or whisk until smooth.
Add mayonnaise, Dijon mustard, lemon juice, and Cajun seasoning.
Mix until creamy. Add salt and pepper to taste.
For extra smoothness, use a hand mixer or food processor.

Step 5: Fill the Eggs
Spoon or pipe the yolk filling into each egg white half.
Use a piping bag for a polished look or a spoon for a rustic touch.

Step 6: Top with Shrimp
Place one cooked shrimp on top of each deviled egg.
If shrimp are large, slice in half lengthwise before topping.

Step 7: Garnish and Serve
Sprinkle with a touch of extra Cajun seasoning or smoked paprika.
Add fresh chopped chives or parsley.
Serve immediately or chill for up to 1 day before serving.
