  • 1 tbsp olive oil

  • 1 tbsp honey or maple syrup

  • ¼ tsp black pepper

  • 2 tbsp chopped fresh parsley (optional)

Optional Add-ins:

  • ¼ cup raisins or dried cranberries

  • ¼ cup chopped walnuts or pecans

  • 1 tbsp chia seeds or sunflower seeds

  • A pinch of cinnamon for warmth


Instructions

Step 1: Prepare the Carrots and Apples
Peel and shred the carrots using a grater or food processor.
Core and shred or julienne the apples (leave the peel on for extra color and nutrition).

Step 2: Make the Dressing
In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper.
