1 tbsp chia seeds or sunflower seeds

Instructions
Step 1: Prepare the Carrots and Apples
Peel and shred the carrots using a grater or food processor.
Core and shred or julienne the apples (leave the peel on for extra color and nutrition).
Step 2: Make the Dressing
In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper.
Step 3: Toss the Salad
Place the shredded carrots and apples in a large mixing bowl.
Pour the dressing over the top and toss gently to combine.
Step 4: Garnish and Serve
Sprinkle with fresh parsley if using.
Serve immediately for the best crunch or refrigerate for 15–20 minutes to let the flavors meld.
Notes
Use Crisp Apples – Choose sweet, firm apples for the best texture.
Toss with Lemon Quickly – Prevents apples from browning.
Adjust Sweetness – Add more honey or syrup if you prefer it sweeter.
Add Crunch – Toss in nuts or seeds for added texture.
Serve Fresh – Best eaten the same day for maximum crunch.
