1 tsp baking soda
-
½ tsp baking powder
-
½ tsp salt
-
1 tbsp chai spice blend (or mix: 1 tsp cinnamon, ½ tsp each cardamom, ginger, allspice, and cloves)
Wet Ingredients:
-
1 cup pumpkin puree (not pumpkin pie filling)
-
2 large eggs
-
½ cup pure maple syrup
-
½ cup brown sugar (light or dark)
-
⅓ cup vegetable oil (or melted coconut oil)
-
¼ cup milk (any kind)
-
1 tsp vanilla extract
Optional Mix-ins:
-
½ cup chopped pecans or walnuts
-
½ cup mini chocolate chips or dried cranberries
Topping:
-
1 tbsp turbinado sugar (for crunch)
-
Pinch of cinnamon
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease and line a 9×5-inch loaf pan with parchment paper for easy removal.
Step 2: Mix the Wet Ingredients
In a large bowl, whisk together pumpkin puree, eggs, maple syrup, brown sugar, oil, milk, and vanilla extract until smooth.
Step 3: Add the Dry Ingredients
Sift or whisk in flour, baking soda, baking powder, salt, and chai spice blend.
Stir just until combined—do not overmix.
Fold in optional mix-ins if using.
Step 4: Pour and Top
Pour the batter into the prepared loaf pan and smooth the top.
Sprinkle with turbinado sugar and a pinch of cinnamon for a beautiful golden crust.
Step 5: Bake the Bread
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
Tent with foil if the top browns too quickly.
Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
Step 6: Slice and Enjoy
Once fully cooled, slice and serve as is or with a pat of butter, cream cheese, or nut butter.
Notes
Use Real Pumpkin – Pure pumpkin puree ensures flavor and moisture.
Measure Flour Properly – Spoon into the measuring cup and level off for accuracy.
Don’t Overmix – Stir gently for a light, tender crumb.
Customize It – Add nuts, chocolate, or fruit to make it your own.
Let It Cool – It slices best and tastes better after cooling.
