- 1 pound Ground Beef
- 2 cups Instant Rice
- 2 cups Chicken Broth
- 1 cup Yellow Onion (diced)
- 1 cup Bell Pepper (diced)
- 1 10-ounce can Diced Tomatoes & Green Chilies (undrained)
- 1 10-ounce can Red Enchilada Sauce
- 1 Taco Seasoning Packet
- 1 cup Colby Jack Cheese (shredded)
Instructions
- In a large skillet over medium heat, cook the ground beef, diced onion, and bell pepper until the beef is browned. Drain any excess grease and stir in the taco seasoning.
