-
1 ½ cups cherry preserves or cherry pie filling
-
1 cup fresh or thawed frozen cherries (halved and pitted)
-
¼ cup cherry juice or fruit juice (like white grape or cranberry)
For the Cream Layer:
-
8 oz mascarpone cheese, softened
-
¾ cup heavy whipping cream
-
¼ cup powdered sugar
-
1 tsp vanilla extract
-
Zest of 1 lemon (optional, for brightness)
For Assembly:
-
24 ladyfinger cookies (savoiardi)
-
Extra cherry preserves or juice for soaking
-
Fresh cherries and shaved chocolate (for garnish)
Instructions
Step 1: Prepare the Cherry Layer
In a bowl, mix cherry preserves with halved cherries and cherry juice.
Stir to combine and set aside.
Step 2: Make the Mascarpone Filling
In a mixing bowl, beat mascarpone with powdered sugar and vanilla until smooth.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the mascarpone mixture.
Add lemon zest for a fresh citrus note, if desired.
Step 3: Soak the Ladyfingers
Quickly dip each ladyfinger into the cherry juice (not too long or they’ll get soggy).
Arrange a single layer of soaked ladyfingers in the bottom of your dish.
Step 4: Layer the Dessert
Spread half of the mascarpone mixture over the ladyfingers.
Top with half of the cherry mixture.
Repeat the layers with the remaining ladyfingers, mascarpone, and cherry topping.
Step 5: Chill and Set
Cover and refrigerate for at least 4 hours, or overnight for best texture and flavor.
Step 6: Garnish and Serve
Top with fresh cherries, shaved chocolate, or a dusting of cocoa powder just before serving.
Scoop or slice and serve chilled.
Notes
Don’t Oversoak – Ladyfingers should be moist but not falling apart.
Use Quality Cherries – Fresh or frozen cherries without added sugar are best.
Chill Well – Allows flavors to meld and gives a firm texture.
Add Almond – A few drops of almond extract add depth to the cherry flavor.
Try Individual Servings – Assemble in small glasses or jars for a stunning presentation.
