Ingredients
- 6 medium chicken thighs (bone-in, excess fat trimmed)
- 1 medium onion (sliced)
- 1 can chickpeas (14 ounces, rinsed and drained)
- ½ cup dried apricots
- 1 cup chicken stock or water
- 1 large preserved lemon (sliced)
- 1½ cups green olives
- Olive oil
- Spices: ginger, garlic, ground cumin, smoked paprika, ground coriander, bay leaves, cayenne pepper
Instructions
- Trim excess fat from the chicken thighs and season with salt and pepper.
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the seasoned chicken thighs for about 4-5 minutes on each side until golden.
- Add the sliced onion and sauté until translucent (approximately 5 minutes). Stir in minced garlic and ginger along with all spices; cook for another minute until fragrant.
- Mix in chickpeas, apricots, chicken stock or water, preserved lemon slices, and green olives; stir gently to combine.
- Bring to a gentle boil then reduce heat to low. Cover the pot and simmer for about 30 minutes until the chicken is tender.
- Serve warm garnished with fresh parsley and thinly sliced lemon.
