  • 3 tablespoons mild oil (like avocado oil)
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1/2 cup mini chocolate chips
  • 1/4 cup pumpkin seeds

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners, lightly spraying them with cooking spray.
  2. In a blender, combine the egg and cottage cheese until smooth.
  3. In a large mixing bowl, mix the blended mixture with pumpkin puree, maple syrup or honey, mild oil, vanilla extract, spices, baking powder, and baking soda until well combined.
  4. Gently fold in the flour until just mixed; do not overmix. Then add the mini chocolate chips.
  5. Distribute the batter evenly into the muffin tin and sprinkle each muffin with pumpkin seeds.
  6. Bake for about 22-23 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool for about 15 minutes before enjoying.
