- 3 tablespoons mild oil (like avocado oil)

- 1 tablespoon pumpkin pie spice
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 cups all-purpose flour
- 1/2 cup mini chocolate chips
- 1/4 cup pumpkin seeds
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with liners, lightly spraying them with cooking spray.
- In a blender, combine the egg and cottage cheese until smooth.
- In a large mixing bowl, mix the blended mixture with pumpkin puree, maple syrup or honey, mild oil, vanilla extract, spices, baking powder, and baking soda until well combined.
