Ingredients

  • 1.5 pounds boneless, skinless chicken breasts (or thighs)
  • 1 (1 oz) packet taco seasoning
  • 1 (10 oz) can Rotel (strained)
  • Juice of 1 lime
  • Tortillas for serving

Instructions

  1. Spray a crockpot with non-stick spray.
  2. Lay chicken in the bottom and sprinkle with taco seasoning.
  3. Pour strained Rotel over the chicken and squeeze lime juice on top.
  4. Cover and cook on high for 3-4 hours or low for 7-8 hours until shredded easily.
  5. Shred chicken in the pot using forks and mix with remaining juices.
  6. Warm tortillas and serve topped with your choice of ingredients.
