- 2 pounds boneless, skinless chicken breasts (or thighs)
- ⅓ cup low sodium soy sauce
- ⅓ cup ketchup
- ¼ cup honey
- 2 teaspoons sesame oil
- 3 cloves garlic (minced)
- ¼ teaspoon black pepper
- Pinch red pepper flakes (optional)
- 1 tablespoon cornstarch
- 1 tablespoon water
- Cooked brown or white rice, sesame seeds, and chopped green onions (for serving)
Instructions
- Place chicken in the slow cooker.
- In a medium bowl, whisk together soy sauce, ketchup, honey, sesame oil, garlic, black pepper, and red pepper flakes. Pour over chicken.
- Cover and cook on low for 3–4 hours or high for 1½–2½ hours until chicken reaches an internal temperature of 165°F.
- Remove chicken and shred it after resting for a few minutes.
- Mix cornstarch with water in a small bowl and stir into the sauce in the slow cooker. Cook on high for an additional 10–20 minutes until thickened.
- Return shredded chicken to the sauce and mix well.
- Serve hot over rice, garnished with sesame seeds and green onions.
