  • 1 1/2 cups brown rice
  • 1 lb large shrimp, peeled and deveined
  • 3 Tbsps grass-fed butter or ghee
  • 3 cups chicken bone broth
  • Fresh cilantro or parsley leaves, chopped
  • 1 Tbsp smoked paprika
  • 1 tsp fine sea salt
  • 1/2 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper

Instructions

  1. Rinse the brown rice under cold water until it runs clear; drain well.
  2. Pat shrimp dry with a paper towel.
  3. In a bowl, whisk together all Cajun seasoning ingredients.
  4. Heat 2 tablespoons of butter in a large skillet over medium heat; cook shrimp for about 2 minutes per side until pink and opaque. Set aside.
  5. In the same skillet, add remaining butter and rinsed rice; toast for one minute while stirring.
  6. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 22-25 minutes until rice is tender.
  7. Stir in cooked shrimp and chopped herbs before serving hot.
