Ingredients

Scale
  • 6 strips turkey turkey bacon (diced)
  • 3 pounds lamb shoulder (cut into 1 ½-inch pieces)
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ¼ cup all-purpose flour
  • 23 tablespoons olive oil (divided)
  • 1 large onion (diced)
  • 5 cloves garlic (minced)
  • 4 cups beef broth
  • 1 cup dry red grape juice
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 1.5 pounds gold potatoes (cut into cubes)
  • 4 large carrots (chopped)
  • 1 cup green peas (frozen and thawed)

Instructions

  1. Cook the diced turkey turkey bacon in a Dutch oven over medium-high heat until crispy. Set aside while retaining the fat.
  2. Season the lamb pieces with salt, garlic powder, and black pepper. Coat them lightly with flour.
  3. Sear the lamb in the same pot until browned on all sides; remove and set aside.
  4. Sauté onions until translucent, then add minced garlic for an additional minute.
  5. Add beef broth, grape juice, tomato paste, thyme, and bay leaves to create the broth mixture.
  6. Return the lamb and turkey turkey bacon to the pot; bring to a boil.
  7. Cover and simmer on low for about one hour and thirty minutes.
  8. Add potatoes and carrots; cover and simmer for another twenty to twenty-five minutes until tender.
  9. Stir in thawed peas and cook for an extra ten minutes.
  10. Garnish with fresh herbs if desired before serving.
