  • 3 tablespoons homemade blackened seasoning
  • 2 cups all-purpose flour
  • 2 cups panko breadcrumbs
  • 3 beaten eggs
  • 4 fresh cod fillets
  • Salt and pepper to taste
  • 4 Kaiser rolls
  • 2 tablespoons softened butter
  • Homemade tartar sauce
  • Boston Bibb lettuce (washed and dried)
  • 2 sliced heirloom tomatoes
  • 1 sliced onion

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Set up a dredging station: mix blackened seasoning into flour, have breadcrumbs and beaten eggs in separate containers.
  3. Rinse cod fillets, pat dry, and season with salt and pepper.
  4. Coat each filet in flour, dip in egg, then cover with panko breadcrumbs.
  5. Fry filets until golden brown (about 5 minutes per side). Drain on paper towels.
  6. Toast Kaiser rolls in a skillet with butter until golden brown.
  7. Assemble sandwiches by spreading tartar sauce on buns, adding lettuce, tomatoes, onions, and fried fish.
  8. Serve immediately and enjoy!
