- 3 tablespoons homemade blackened seasoning

- 2 cups panko breadcrumbs
- 3 beaten eggs
- 4 fresh cod fillets
- Salt and pepper to taste
- 4 Kaiser rolls
- 2 tablespoons softened butter
- Homemade tartar sauce
- Boston Bibb lettuce (washed and dried)
- 2 sliced heirloom tomatoes
- 1 sliced onion
Instructions
- Heat oil in a large skillet over medium-high heat.
- Set up a dredging station: mix blackened seasoning into flour, have breadcrumbs and beaten eggs in separate containers.
- Rinse cod fillets, pat dry, and season with salt and pepper.
- Coat each filet in flour, dip in egg, then cover with panko breadcrumbs.
- Fry filets until golden brown (about 5 minutes per side). Drain on paper towels.
- Toast Kaiser rolls in a skillet with butter until golden brown.
- Assemble sandwiches by spreading tartar sauce on buns, adding lettuce, tomatoes, onions, and fried fish.
