  • 1 ½ pounds beef stew meat
  • 2 tablespoons olive oil
  • 1 cup dry red grape juice
  • 4 cups beef stock
  • 2 large sweet onions
  • 8 ounces cavatappi or short pasta
  • 8 ounces gruyère cheese

Instructions

  1. Preheat oven to 325°F. Season beef with salt and pepper.
  2. In a Dutch oven, heat olive oil over medium-high heat and brown the beef in batches.
  3. Deglaze the pot with grape juice, then add the beef back along with carrots, onion, garlic, thyme, Worcestershire sauce, and beef stock.
  4. Bring to a boil, cover, and transfer to the oven for 2–2½ hours until tender.
  5. Shred the beef and strain the braising liquid.
  6. In a skillet, caramelize onions in butter until deeply browned.
  7. Deglaze skillet with dry apple juice; add reserved braising liquid and pasta, cooking until al dente.
  8. Stir in shredded beef, top with gruyère cheese, and bake until melted.
