Ingredients
For the Banana Bread:

1 tsp cinnamon (optional)

3 ripe bananas, mashed (about 1 ¼ cups)

½ cup honey

2 large eggs

⅓ cup melted coconut oil or vegetable oil

¼ cup plain yogurt or sour cream

Instructions
Step 1: Prepare the Oven and Pan
Preheat your oven to 350°F (175°C).
Grease a 9×5-inch loaf pan or line it with parchment paper.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon if using.
Set aside.
Step 3: Mix the Wet Ingredients
In a large bowl, whisk together the mashed bananas, honey, eggs, melted coconut oil, vanilla extract, and yogurt until smooth and well combined.
Step 4: Combine the Ingredients
Gently fold the dry ingredients into the wet ingredients until just combined.
Be careful not to overmix to keep the bread tender.
Fold in any optional add-ins like nuts or chocolate chips.
Step 5: Bake the Banana Bread
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
If the top starts to brown too much, tent with foil halfway through baking.
Step 6: Cool and Serve
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
