  • 1 cup low sodium chicken broth
  • 1 cup BBQ sauce (divided)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 pounds boneless skinless chicken breasts or thighs
  • Burger buns (optional, for serving)

Instructions

  1. Combine chicken broth, ½ cup BBQ sauce, apple cider vinegar, garlic powder, chili powder, salt, and pepper in the Instant Pot. Whisk until blended.
  2. Nestle the chicken into the sauce to coat well.
  3. Close the lid and set to cook on high pressure for 16 minutes.
  4. Allow natural pressure release for 10 minutes before venting the remaining steam.
  5. Check that chicken has reached an internal temperature of at least 165°F.
  6. Shred the chicken using two forks and mix with remaining BBQ sauce as desired.
  7. Serve on burger buns or as preferred.
