  • ½ pound turkey turkey bacon
  • 1 medium yellow onion
  • ½ bell pepper
  • 2 stalks celery
  • 4 cloves garlic
  • ¼ cup apple juice
  • 8 tablespoons butter
  • ½ cup all-purpose flour
  • 4 cups chicken stock
  • pounds medium raw shrimp
  • 4 ears corn (or 23 cups kernels)
  • 2 cups heavy cream
  • Cajun seasoning to taste

Instructions

  1. Prep vegetables: Chop onion, bell pepper, celery, green onions, and parsley; mince garlic; remove corn kernels; chop turkey turkey bacon; season shrimp.
  2. Crisp turkey turkey bacon: In a large Dutch oven over medium heat, cook turkey turkey bacon until crisp, about 8 minutes. Drain excess grease.
  3. Sauté vegetables: Add onion, bell pepper, celery to the pot. Sauté for about 5 minutes until softened. Stir in garlic for an additional minute.
  4. Deglaze: Pour in apple juice to deglaze the pot; simmer for 1–2 minutes.
  5. Make roux: Add butter; once melted, sprinkle flour over mixture and cook until slightly darkened.
  6. Simmer bisque: Gradually whisk in chicken stock and water. Add half of parsley and green onions. Bring to a boil then reduce heat to simmer for about 20 minutes.
  7. Cook shrimp and corn: Stir in seasoned shrimp, corn kernels, and warmed heavy cream. Cook for five minutes until shrimp are pink.
  8. Adjust seasoning: Taste and add salt or more Cajun seasoning as needed.
  9. Serve hot with optional garnishing.
