For the Batter:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon vanilla extract

For the Lemon Filling:

 

  • 1 1/2 cups lemon pie filling or lemon curd
  • Zest of 1 lemon (for extra flavor)
  • 2 tablespoons fresh lemon juice

Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 350°F (175°C).
  2. Pour melted butter into the bottom of a 9×9-inch baking dish.

Step 2: Make the Batter

  1. In a bowl, whisk together flour, baking powder, sugar, and salt.
  2. Stir in milk and vanilla extract until smooth.
  3. Pour the batter over the melted butter—do not stir!

Step 3: Add the Lemon Filling

  1. Spoon lemon pie filling (or lemon curd) over the batter.
  2. Drizzle with fresh lemon juice and sprinkle lemon zest on top.
  3. The filling will sink, and as it bakes, it will rise to the top—creating that “magic” effect!

Step 4: Bake the Cobbler

  1. Place the dish in the oven and bake for 40-45 minutes, or until the top is golden brown.
  2. Let it cool for at least 10 minutes before serving.

Step 5: Serve & Enjoy

 

  1. Serve warm with vanilla ice cream or whipped cream.
  2. Dust with powdered sugar for an extra touch!
