- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 cup granulated sugar
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 teaspoon vanilla extract
For the Lemon Filling:
- 1 1/2 cups lemon pie filling or lemon curd
- Zest of 1 lemon (for extra flavor)
- 2 tablespoons fresh lemon juice
Instructions
Step 1: Preheat & Prep
- Preheat your oven to 350°F (175°C).
- Pour melted butter into the bottom of a 9×9-inch baking dish.
Step 2: Make the Batter
- In a bowl, whisk together flour, baking powder, sugar, and salt.
- Stir in milk and vanilla extract until smooth.
- Pour the batter over the melted butter—do not stir!
Step 3: Add the Lemon Filling
- Spoon lemon pie filling (or lemon curd) over the batter.
- Drizzle with fresh lemon juice and sprinkle lemon zest on top.
- The filling will sink, and as it bakes, it will rise to the top—creating that “magic” effect!
Step 4: Bake the Cobbler
- Place the dish in the oven and bake for 40-45 minutes, or until the top is golden brown.
- Let it cool for at least 10 minutes before serving.
