  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 jalapeno (finely chopped)
  • 23 tablespoons taco seasoning
  • 1 cup long grain rice (rinsed)
  • 2 cups passata or tomato puree
  • 2 cups chicken broth
  • 1 can black beans (drained and rinsed)
  • 1 cup canned sweet corn (drained)
  • 1 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. Heat olive oil in a deep skillet over medium-high heat. Add cubed chicken and cook for about 5 minutes until lightly browned.
  2. Stir in minced garlic, diced bell peppers, jalapeno, and taco seasoning; cook for an additional 1–2 minutes until fragrant.
  3. Add rinsed rice, passata, chicken broth, black beans, salt, and pepper; stir well and bring to a simmer.
  4. Reduce heat to low, cover, and cook for 15–20 minutes until rice is tender.
  5. Stir in sweet corn evenly throughout the mixture.
  6. Sprinkle shredded cheese on top; broil for 3–5 minutes until bubbly or cover for 5–7 minutes until melted.
  7. Serve hot topped with green onions or cilantro if desired.
