Ingredients
- 1 lb chicken tenders
- Poultry seasoning (or cajun seasoning)
- 3 tablespoons minced garlic
- 2 tablespoons olive oil
- ½ cup butter
- ½ teaspoon red pepper flakes
- ½ teaspoon salt
- ¾ cup white grape juice
- 1 ½ cups uncooked white rice (basmati or jasmine)
- 2 ¾ cups low sodium chicken stock
- ½ cup freshly grated parmesan cheese
- 1 tablespoon freshly minced parsley
Instructions
- Season the chicken on both sides. Heat olive oil in a skillet over medium-high heat and cook chicken for about 3 minutes per side until golden. Reduce heat to low.
- Add half of the butter and one tablespoon of garlic to the pan; sauté until fragrant. Remove the chicken and keep warm.
- In the same skillet, increase heat slightly, add remaining butter and garlic, then pour in grape juice. Simmer for 3-5 minutes.
- Stir in uncooked rice and sauté for about 5 minutes.
- Add chicken stock, red pepper flakes, and salt; bring to a boil then reduce to low heat, cover, and simmer for 20 minutes until rice is tender.
- Stir in parmesan cheese before adding diced chicken on top.
- Mix remaining melted butter with reserved pan juices and parsley; drizzle over the dish before serving.
