  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 can pumpkin purée
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 package cream cheese (room temperature)
  • 4 oz. butter (room temperature)
  • 1 lb powdered sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F.
  2. Grease a jelly roll pan with cooking spray.
  3. In a large mixing bowl, combine sugar, vegetable oil, eggs, flour, pumpkin purée, baking soda, vanilla, cinnamon, and baking powder. Mix until smooth.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. While baking, prepare the frosting by mixing cream cheese and butter until smooth; add powdered sugar and vanilla.
  7. Let the bars cool for at least an hour before frosting.
