Ingredients
- 6–8 ripe large peaches (about 3 pounds)
- 1 cup granulated sugar (divided)
- 1/2 cup water (for peach puree)
- 1 tablespoon fresh lemon juice (for peach puree)
- 1 1/2 cups freshly squeezed lemon juice (from about 8–10 medium lemons)
- 4–6 cups cold water (for dilution)
- Fresh peach slices, lemon wheels, and mint sprigs (for garnish)

Instructions
- Wash, pit, and dice the peaches. In a medium saucepan, combine diced peaches, 1/2 cup sugar, 1/2 cup water, and 1 tablespoon lemon juice. Simmer over medium-low heat for 10-15 minutes until soft.
- Mash the peaches thoroughly and strain through a fine-mesh sieve into a large bowl to create a smooth puree. Allow it to cool completely.
- In a small saucepan, combine 1 cup sugar and 1 cup water; heat until sugar dissolves. Let cool.
- Juice the lemons to yield about 1 1/2 cups of juice; strain out any seeds or pulp.
- In a large pitcher, mix the cooled simple syrup with strained lemon juice. Stir well.
- Add cooled peach puree to the pitcher and stir in 4 cups of cold water. Taste and adjust with more water if desired.
- Chill in the refrigerator for at least 30 minutes before serving over ice with garnishes.
