Ingredients

For the Deviled Eggs:
6 large eggs
3 tbsp mayonnaise
1½ tsp Dijon mustard
1½ tsp chili garlic sauce (adjust to taste)
1 tsp rice vinegar or apple cider vinegar
¼ tsp garlic powder
¼ tsp salt
¼ tsp black pepper

For Garnish:
1 tsp chili garlic sauce (for topping)
1 green onion, finely sliced
Pinch of smoked paprika (optional)
Sesame seeds (optional)


Instructions

Step 1: Hard-Boil the Eggs

  1. Place the eggs in a single layer in a saucepan and cover with water by 1 inch.

  2. Bring to a boil over medium-high heat.

  3. Once boiling, turn off the heat and cover. Let sit for 10–12 minutes.

  4. Transfer eggs to a bowl of ice water and cool for 5–10 minutes.

  5. Gently peel and pat dry with a paper towel.

Step 2: Prepare the Filling
6. Slice each egg in half lengthwise and carefully remove the yolks.
7. Place yolks in a bowl and mash with a fork until smooth.
8. Add mayonnaise, mustard, chili garlic sauce, vinegar, garlic powder, salt, and black pepper.
9. Mix until the filling is creamy and smooth. Taste and adjust seasoning or heat as needed.

Step 3: Fill the Eggs
10. Spoon or pipe the yolk mixture back into the egg white halves.
11. Divide evenly among all 12 halves.

Step 4: Garnish and Serve
12. Drizzle a small dot of chili garlic sauce on top of each egg.
13. Sprinkle with green onions, paprika, and sesame seeds if desired.
14. Arrange on a serving platter and serve immediately or chill until ready.

Notes

Use Older Eggs – They peel more easily than fresh ones.
Mash Yolk Thoroughly – For the smoothest filling, mash until no lumps remain.
Piping Bag Trick – Use a zip-top bag with the corner snipped for a quick piping solution.
Customize the Heat – Add more or less chili garlic sauce based on your spice preference.
Chill Before Serving – Cold deviled eggs hold their shape and taste even better.
