Ingredients
- 4 boneless, skinless chicken breasts
- ½ cup sun-dried tomatoes (in oil), drained and chopped
- ½ cup crumbled feta cheese
- 1 cup fresh spinach, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- Toothpicks (to secure the chicken)
Instructions
Step 1: Prepare the Stuffing
- In a mixing bowl, combine the chopped sun-dried tomatoes, crumbled feta cheese, chopped spinach, minced garlic, and dried oregano.
- Mix well and set aside.
Step 2: Prepare the Chicken
- Using a sharp knife, cut a pocket into each chicken breast without cutting all the way through.
- Season the chicken breasts with salt and pepper on both sides.
Step 3: Stuff the Chicken
- Spoon the sun-dried tomato and feta mixture into each chicken pocket.
- Secure the opening with toothpicks to prevent the stuffing from falling out during cooking.
Step 4: Sear the Chicken
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat.
- Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
Step 5: Bake the Chicken
- Transfer the seared chicken breasts to a baking dish.
- Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before serving.
