  • 1 tablespoon taco seasoning
  • 2 tablespoons olive oil
  • 1/4 cup chopped onion
  • 1 1/2 cups uncooked white rice
  • 2 cups chicken broth
  • 1 cup chunky salsa
  • 1/2 cup sour cream
  • 8 flour tortillas (burrito size)
  • 1 cup nacho cheese sauce
  • 2 cups shredded Mexican cheese blend

Instructions

  1. In a skillet over medium heat, add olive oil and sauté chopped onion until translucent. Add ground beef and taco seasoning, cooking until browned.
  2. In a medium pot, combine rice with chicken broth. Bring to a boil, then reduce heat and cover for about 20 minutes until fluffy.
  3. Mix cooked beef with garlic salt, cumin, chili powder, sugar, paprika, salsa, chipotle sauce, and sour cream.
  4. Spread nacho cheese sauce on each tortilla; add rice and beef mixture followed by shredded cheese. Roll into burritos.
