  • 8 ounces rotini pasta
  • 1 pound salmon, cut into pieces
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a bowl, toss salmon with olive oil, garlic powder, salt, and pepper until well-coated.
  3. Heat a skillet over medium heat and sauté the salmon for about 4-5 minutes per side until cooked through. Remove from the skillet.
  4. In the same skillet, add more olive oil and minced garlic; sauté until fragrant. Stir in tomato paste followed by heavy cream, parmesan cheese, salt, and pepper.
  5. Add cooked rotini and sautéed salmon back to the skillet; toss to combine thoroughly.
  6. Finish with chopped fresh basil before serving.
